Another food science project: cheese! Heat up milk to 180 degrees F, add acid (lemon juice, vinegar) a teaspoon at a time until curds form, let rest 10 mins, and strain into cheese cloth.

Squeeze as much of the whey from the cheese as you can. Press under something heavy. Add salt and herbs. This isn't any cheaper than buying cheese, but it's fun to try, and if you ever have access to a cow or goats...
